Miss Chef® apple vanilla and lemongrass puree

Ingrédients
- 12 Miss Chef® apples
- 1 lemongrass stick
- 200 g mineral water
- 20 g butter
- 2 vanilla pods
- 1 lemon
Préparation
- Wash, peel and core 8 apples, cut into large dices. chop the lemongrass.
- Cook the apples on low heat in a pan with the butter, lemongrass and vanilla. watch and stir regularly.
- After 30 minutes, check if the mixture is cooked, remove the pieces of lemongrass and mix.
- Wash the remaining apples and chop into matchsticks. squeeze lemon over the matchsticks, set aside until you’re ready to serve.
Presentation:
- Place the apple matchsticks on top of the puree.
