Authentic Miss Chef® Apple Pie

Ingrédients
Pastry:
- 800g plain flour
- 400g softened butter
- 70g icing sugar
- Fleur de sel
- 5g baking powder
- 5g baking powder
- 1 egg yolk
Filling:
- 1.5kg Miss Chef® Apples (or 12 apples)
- 50g of lemon juice (or juice of 1 lemon)
- 150g caster sugar
- 150g brown sugar
- 20g powdered cinnamon
- 30g cornstarch
- 2g fleur de sel
- 3g vanilla extract
Préparation
Pastry:
- Add the flour and the butter to a mixing bowl and lightly rub into breadcrumbs with your fingertips.
- Add the icing sugar, salt and baking powder.
- Gradually mix in water until you have a smooth dough.
- Cover in cling film and chill.
Filling:
- Wash, peel and core the apples. Cut them into thin slices, 3-4mm wide.
- Put the apples in a mixing bowl and add the lemon juice, both types of sugar, the cinnamon, the cornstarch the salt and the vanilla extract.
- Gently stir
- Cover the bowl with cling film and chill for 30 minutes.
Assembly:
- Roll out the pastry using a rolling pin and put it into a greased deep-sided pie dish.
- Cut the remaining pastry into 2cm-wide strips. These will be used to decorate the top. Set aside in the fridge.
- Add the filling, including juice, to the pie dish.
- In a small bowl, loosen the egg yolk up by adding a teaspoon of water.
- Create a lattice on top of the pie using the pastry strips.
- Brush the pastry all over with the egg yolk mixture.
- Bake in the middle of the oven for 45 minutes at 180°C.
